What makes Bridges Matcha ceremonial grade? +

Gokujō is sourced exclusively from Uji-City, Kyoto Prefecture, Japan's most celebrated matcha region for over 800 years. It is Ichibancha (April/May first flush), Tezumi hand-picked: pickers selectively pluck only the youngest bud and the first two to three leaves by hand. The Samidori cultivar is shaded for 30+ days using the Tana tunnel method, thereby increasing chlorophyll and amino acid concentrations. Stone-ground on granite. JAS (Japan Agricultural Standard) and JONA (Japan Organic & Natural Foods Association) are organically certified. The result is a vivid jade, umami-rich matcha that meets the most rigorous standards for ceremonial-grade matcha.

What is the difference between Gokujō and Tsunezune? +

Gokujō (極上) is Grade 01, a limited-edition pinnacle ceremonial matcha at $55/20g, from the Samidori cultivar, Ichibancha first harvest, Tezumi hand-picked, with an intensely smooth, layered flavor profile. Tsunezune (常々) is Grade 02, an everyday ceremonial at $35/30g, designed for daily practice with the same Uji origin and organic certification.

Is Bridges Matcha organic? +

Yes. Bridges Matcha holds both JAS (Japanese Agricultural Standard) and JONA (Japan Organic & Natural Foods Association) organic certifications, two of the most rigorous organic standards in the world.

How do I prepare ceremonial grade matcha? +

Sift 1.5-2g of Gokujō into a warmed chawan. Add 2-3oz of water at 75-80°C (167-176°F), never boiling. Whisk with a chasen in a brisk W or M motion until a fine foam forms. Drink immediately. The Samidori cultivar's natural sweetness means no bitterness even at koicha (thick tea) concentration.
